The Clubs: Club New Orleans June 2011 Newsletter

We want to thank everyone for a great Memorial Day Weekend.  We've started the Summer off with a bang and June promises to be a blast.

Start the month off with the New Orleans Oyster Festival, June 4-5.  There will be oyster eating contests, largest oyster contest, oyster dishes from many of our fine French Quarter restaurants and of course lots of good music.  Visit www.neworleansoysterfestival.org   for all the details.

For a real cajun experience come on down to the Louisiana Cajun-Zydeco Fest featuring food, cooking demos, and crafts.  Cajun and zydeco music will be performed by three Grammy Award winners;  Terrance Simien, BeauSoliel and Chubby Carrier.  This festival is held in conjunction with the Creole Tomato festival and the Louisiana Seafood Festival.  For more information check out www.cajunzydecofest.com

Finish the month out by taking part in the "Everything French Festival" which includes French wine tastings with food from our famous French restaurants. See details at www.facc-la.com

THE APRIL BLUES
WE CERTAINLY HOPE THE WEATHER THAT BROUGHT US DOWN IN APRIL, DOESN'T FOLLOW US INTO MAY. WHAT A WET AND GLOOMY MONTH!

A BAD CASE OF GAS
WITH THE COST OF GAS @ 4.17 AND ALL OF THE RISING COSTS BECAUSE OF IT, IT'S A WONDER IF ANYONE CAN GET OUT AND HAVE A GOOD TIME AT ALL. IN MAY WE ARE GOING TO OFFER UP A FEW "SPECIALS" THAT WE HOPE WILL HELP THE WALLET.

SUNDAY BUFFETS
IT'S NO SECRET THAT WE OFFER UP A DELICIOUS SPREAD OF FOOD EVERY SUNDAY @ 1PM. A FREE MEAL IS NEVER A BAD THING.

Healthy Mashed Sweet Potatoes
The spice mixture and orange juice in this recipe adds a wonderful complement to the flavor of the sweet potatoes for a great new addition to your Healthiest Way of Eating. It also contains only 98 calories but 249% of your daily value (DV) for health-promoting vitamin A! Enjoy!

Prep and Cook Time: 15 minutes
Serves 4

Ingredients:
  • 2 medium-sized sweet potatoes or yams, sliced thin for quick cooking
  • 2 TBS fresh orange juice
  • 1/2 tsp garam masala
  • 1 TBS extra virgin olive oil
  • Salt and white pepper to taste
Directions:
  1. Bring lightly salted water to a boil in a steamer with a tight fitting lid.
  2. Steam peeled and sliced sweet potatoes in steamer basket, covered, for about 10 minutes, or until tender.
  3. When tender, mash with potato masher, adding rest of ingredients.
Healthy Cooking Tips:
If you do not have sensitivity to fats, an extra TBS olive oil will give it a richer taste.
